DELICIOUS PISTACHIO PESTO

MAKE THIS GORGEOUS PISTACHIO PESTO IN MINUTES

INGREDIENTS AND INSTRUCTIONS

• 2 cups loosely packed fresh basil
• 1/2 cup shelled roasted and salted pistachios
• 1 tsp garlic puree
• 1/4 cup parmigiana-reggiano cheese
• 1/3 cup EVOO

INSTRUCTIONS

• Put all ingredients into a food processor, and add olive oil slowly while continuing to pulse.  If you have to stop and scrape the sides that's fine.

I use this pesto on a pasta salad with sun dried tomatoes, spinach, roasted pint nuts and whole pistachios.  See photo below.
